Figs are coming off now, so its kinda like making hay while the sun shines. And believe me it is shining. But figs taste really good this winter. Big biscuits, lots of butter with fig preserves, Good Eats. CF:)
Recipe:
1 pound of figs
1 cup of sugar.
1 cup of water

Add sugar to figs and let set over night. Or not, I don't.
Start off with low heat so as not to burn.
Cook until the syrup is as heavy as you like it, I like real heavy syrup.
Ladle into pint jars, cap and water bath in boiling water for 5 min. Remove and tighten caps. Store in a cool dark place.
