Bubba, does every thing in history have to be a race issue? Many of my ancestors, the Irish fought in the civil war too and went west after it was over. I wonder if half of them were a quarter of the cowboys and that's why cowboys liked to drink, fight and eat potatoes. Us Irish are such a bad influence.
Chef, just making the point about entertainment vs real history. Yeah, plenty of Irish and Scots went west. Did you know the Chief of the Cherokee is a Ross? The men who went west and became cowboys were generally men with no other prospects of honest employment and social outcasts and a pretty rough and tumble bunch.

Sounds good but I have a question. I read that bear sign had maybe fruit in them. Also, do you have a recipe for baked bear sign? I'm new to this website so I hope I can figure out how to find your answer!!!
gina, the recipe I posted is pretty basic. Just about every cook had their own variations and personal touches. What I posted can be made in a trail camp by a decent chuck wagon cook. As for baking, I don't know. Since they're a donut and donuts tend to be fried I'm out of my league on baking them. Maybe someone with more experience with baking can help.
