hrimp curry

This very tasty curry recipe is my family's favorite and I love to share it
with you.

1 1/2 pound of uncooked shrimp
2 onions
1 large pepper {or half green and half red}
2-3 cloves of garlic
1 large apple, any kind will do
olive oil
2 tbl spn of Madras curry {or any kind you like}
1 tbl spn of tomato paste
1/3 cup of heavy cream , optional
salt and pepper

Cut the vegetables and the apple in pieces
Saute them in the oil till cooked.
Blend them in a blender. Set at side.

Saute the shrimp in olive oil on both sides till they change color, aprox. two
to three minutes. Add the curry powder, salt and pepper.
Add the blended vegetables and the tomato paste with
half a cup of water, stir and let it cook for few minutes till all
the ingrediens blend nicely. You may need little more water.
At this point you can add the heavy cream or you can leave it without it.

Basmati rise goes nicely with this recipe.
