Hummus (Sun-Dried Tomatoes)

SERVES 1 , 1 cup
1/2 (15 ounce) can garbanzo beans
2 tablespoons sun-dried tomatoes packed in oil, oil kept
2-3 chopped garlic cloves
2-3 tablespoons water
1/4 teaspoon salt
1/8 teaspoon pepper

In the food processor/electric chopper, add garlic and tomatoes.
Turn on to chop the ingredients (if not slicing ingredients first, I think this is faster).
Add chickpeas, water, salt and pepper.
Pulse the entire mixture, stirring once in the middle, until it's smooth and there are no chunks.
Enjoy!
Pitas cut into wedges, top of pita pocket seperated from bottom pocket, sprayed with cooking spray on both sides, and baked for 15 minutes at 400
degrees make a light, crispy accompaniment.

I LOVE LOVE LOVE sundried tomatoes.
For a little while SAMS was getting in big jars of sundried tomatoes in evoo but they havent gotten them in a year. Everytime I go over there I check lol. Big Lots used to get them but havent in ages. They are expensive as heck at Walmart and Krogers.

Oh I am like you Janie, they are awesome!!! I don't buy them much either 'cause they are a wee-bit pricey! Too bad I could not dry my own 'maters and put them in jars with EEVO

janie and cath- try putting sun-drieds into the food processor w/ olive oil, balsamic vinegar and whatever else you like. Makes an incredible vinaigrette that's not only yummy on greens, but also makes the absolute BEST pasta salad!
