Marinated Tangerine Olives

Marinated Tangerine Olives (I found this a few weeks ago)

2 cups green olives, no pips
2 cloves garlic crushed
2 Tbsp grated tangerine zest
1/2 cup fresh tangerine juice
4 thin lemon slices, cut in half and seeded
1/4 cup extra virgin olive oil
1/2 small chile crushed, or more to taste
1/4 tsp ground cumin

Method
Place everything in a large bowl or jar and mix well. Marinate overnight at room temperature, tossing occasionally. For a better flavor marinate in fridge for up to a week - if they last that long! I also added more chillies.

I loved these the first time I made them so have made a big bottle of them. My husband's idea was that we keep them till Christmas but already they are calling....calling. I have a wonderful bottle of Spanish wine that I know will be great with them!
