1 1/2 C blanched, whole almonds
1 1/2 C confectioners' sugar
1 egg white
1 1/4 tsp. almond flavouring
1/4 tsp. salt
Food colorings - green, red, yellow
About 20 whole cloves to fashion stems for fruit shapes


In blender at medium speed or in food processor with knife blade attached, finely grind almonds, 1/2 C at a time. (If using food processor, add confectioners' sugar, egg white, almond flavouring, salt and whatever food coloring you plan to use, to ground almonds and blend to make stiff paste.)

Shape one tbls. of dough into selected fruit shape. (cover remaining dough with plastic wrap) Repeat until all dough is used. With a small artist's brush, tint fruit shapes to desired colour, diluting food colouring with water for shading. Press stems (cloves) into tops of fruit shapes and let marzipan dry on wire racks about 30 minutes. These are tasty and delightful. :)
