Ingredients:

2 C sugar
3/4 C light corn syrup
1/2 C water
2 tsp. peppermint extract
4 drops green food coloring
confectioners' sugar

Directions:

Lightly grease a rimmed baking sheet with butter. Put the sugar, corn syrup and water in a heavy-bottomed saucepan and stir over medium heat until the sugar dissolves. Continue to cook, without stirring, until the mixture reaches 302 degrees F (hard crack stage) on a candy thermometer.

Remove the saucepan from the heat and add the peppermint extract and green food coloring. Stir with a wooden spoon to combine, then quickly pour the mixture in the center of the baking sheet. It will spread into a wide pool.

Lightly sprinkle with confectioners' sugar before the mixture is fully set, then let it cool completely. Use your hands to lift the hardened sheet of candy and give it a sharp whack on the baking sheet to break it into bite-sized pieces. Toss with a little additional confectioners' sugar to coat each piece and prevent them sticking together. Store in an airtight tin. Kids love these and you can use other colors as well to produce "Ruby Pieces", "Amethyst Pieces", "Yellow Diamond Pieces" or "Sapphire Pieces" and anythng else that comes to mind. :):)
