Pumpkin Muffins

1 c. sugar
1 c. brown sugar
3 1/4 c. flour
1/2 tsp. baking powder
1 tsp. salt
2 tsp. baking soda
1 pinch cinnamon (I put in 3 HUGE pinches...lol)
2/3 c. vegetable oil
3 eggs
1 c. raisins (optional)
2 c. canned pumpkin pie filling (I used Libby's)
additional brown sugar

In a large bowl, combine the flour, sugars, baking soda, baking powder, salt & cinnamon; mix well. In a small bowl, beat the eggs with the oil and canned pumpkin, until well blended. Stir in the raisins, if using. Add the pumpkin mixture to the dry ingredients and blend well.

Pour the batter into greased muffin tins (I cheated & used paper liners), filling most of the way. (The recipe says that it makes 18 muffins, but I got 24 regular size that were filled to the top before baking.) Sprinkle the tops of the muffins with brown sugar, to taste. (I sprinkled the tops with additional cinnamon & quite a bit of brown sugar) The recipe said to bake at 350* for 15-18 mins. or until a toothpick inserted in center comes out clean, but I found that even though my oven is "true to temp", the muffins took more like 25-28 mins.
