Stuffed Chicken Breast

SERVES 8
1 (14 ounce) can Italian tomatoes
1 1/4 cups shredded cheese
1 (16 ounce) package seasoned stuffing mix
8 boneless skinless chicken breasts
1/3 cup red pepper Italian dressing
1/4 cup chopped basil

Drain tomatoes, roughly chop.
Mix in large bowl with 3/4 cup of shredded cheese, 1/4 cup chopped basil, stuffing and dressing.
Mix well.
Stuff chicken breast with mixture.
Place in baking dish and top with remaining cheese.
Bake at 350 for 40 minutes.

I made cordon-blue for tomorrow's dinner, they had 2 in a PAC. I have not been cooking that much lately. Cookie :)

I have been tired, maybe it's the weather it keeps changing. I was cooking a lot there for a while then you know shop-cook-clean sometimes you just need a break. Cookie :)

I love stuffed chicken breast and I really like chicken cooked with a tomato product. I have just never combined the two. Did you like how the stuffing tasted with the tomatoes?
