To be honest, when it comes out of the oven nice and hot, a nice hunk of butter is slathered onto it, I don't think anyone is going to complain, either way it's made.
Janie, I make my corn bread using just about the same recipe you have posted. At times I like to add diced cranberries to the batter. I have also used Boston Markets cranberry compote several times. Cranberries go really well with cornbread.

There used to be cornbread that I loved to eat it had whole kernel corn in it and some jalepenos and cheddar cheese, oh my gosh was that stuff heaven on earth!!! I never had the recipe but did have it when others had made it and I truly loved the stuff!:p

This is one of the recipes posted to my blog about Corn bread several years ago from a friend in South Carolina. I have a hard enough of a time getting self rising flour here. Getting a self rising corn meal is impossible. With a regular self rising flour if I have to make my own, I use per cup of flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt. I don't get the lift of a self rising flour so I'm thinking maybe more of a bread or cake flour is used in self rising flour.
Sour Cream Cornbread...
1 and 1/4 C Self Rising Cornmeal
2 Tbs Baking Powder
1 C Cream Style Corn
1 8 oz carton Sour Cream
2 Eggs
1/2 C Corn Oil
Combine corn, sour cream, eggs and corn oil. Mix well. Combine corn meal and baking powder. Stir into corn mixture. Pour into a greased 10-inch iron skillet and bake at 400 degrees for 30 minutes or until golden brown.

I like corn bread, never made it before. I like it warm with butter on it, Your recipe looks good. I like the idea with cranberries in it. I wonder if you could add chocolate chips to your recipe? I really like the sweet corn bread. Cookie
