Sweet Cornbread

Sweet Cornbread

1/2 cup cornmeal
1 1/2 cups flour
2/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup oil
3 tablespoons melted butter
1 tablespoon honey
2 eggs, beaten
1 1/4 cups milk

Preheat oven to 350º.
In a bowl, combine cornmeal, flour, sugar, baking powder, and salt.
Add the oil, melted butter, honey, eggs, and milk.
Pour into a greased 8-inch square pan.
Bake for 35 minutes.
 
I was born and raised further south than many of the Southern folks I live around here in GA that take suh great pride in bein' sothern folks, and I love sweet cornbread, like it either way really, but I sure know what you mean 'bout some of 'em gettin real fired up about cornbread and such! There's no right or wrong cornbread it is just plain old good any way ya' slice it!;)

Oh yeah and just tonight we had cornbread muffins to crumble up over our 15 Bean Soup m-m-m-m-m good eatin'!

Yep me too:rolleyes: Not a big 'nuff issue to get all fired up 'bout huh Janie?!? I mean geez Louise some folks just like gettin' fired up, they belong on the Jerry Springer show:D True Southerners like us don't need to prove nuffin to nobody, and we shore know good eatin'

Sometimes I want regular cornbread and sometimes I want the sweet.
 
To be honest, when it comes out of the oven nice and hot, a nice hunk of butter is slathered onto it, I don't think anyone is going to complain, either way it's made.
Janie, I make my corn bread using just about the same recipe you have posted. At times I like to add diced cranberries to the batter. I have also used Boston Markets cranberry compote several times. Cranberries go really well with cornbread.
 
I had no idea cranberries go good with cornbread! How interesting!

There used to be cornbread that I loved to eat it had whole kernel corn in it and some jalepenos and cheddar cheese, oh my gosh was that stuff heaven on earth!!! I never had the recipe but did have it when others had made it and I truly loved the stuff!:p
 
Sour Cream Cornbread...

This is one of the recipes posted to my blog about Corn bread several years ago from a friend in South Carolina. I have a hard enough of a time getting self rising flour here. Getting a self rising corn meal is impossible. With a regular self rising flour if I have to make my own, I use per cup of flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt. I don't get the lift of a self rising flour so I'm thinking maybe more of a bread or cake flour is used in self rising flour.

Sour Cream Cornbread...
1 and 1/4 C Self Rising Cornmeal
2 Tbs Baking Powder
1 C Cream Style Corn
1 8 oz carton Sour Cream
2 Eggs
1/2 C Corn Oil

Combine corn, sour cream, eggs and corn oil. Mix well. Combine corn meal and baking powder. Stir into corn mixture. Pour into a greased 10-inch iron skillet and bake at 400 degrees for 30 minutes or until golden brown.

I like corn bread, never made it before. I like it warm with butter on it, Your recipe looks good. I like the idea with cranberries in it. I wonder if you could add chocolate chips to your recipe? I really like the sweet corn bread. Cookie :)
 
I don't think I would add chocolate chips.
I would probably just make some chocolate chip muffins in that case.
 
I crave chocolate every day lol.
Jon just made me an easter basket yesterday loaded with chocolate. Im trying very hard to be good and only eat two pieces a day. He makes me an easter basket every year. I have the last four (now empty) here and the rest are in storage.
 
Oh that's Sweet he makes you an Easter Basket (very thoughtful.) I gave up chocolate and p.b. for lent, I can't wait until Easter is here. I see chocolate everywhere in the stores it's so Tempting Love Chocolate! Happy Spring, Cookie :)
 
My youngest gave up chocolate for Lent too Cookie. I have to give her credit because she really loves chocolate but is sticking to her guns. Of course the rest of us haven't been eating it either because that would be cruel, lol. Grrrr.
