Jambalaya - flavor packed - low calorie

RECIPE FOR JAMBALAYA WITH CHICKEN, SHRIMP & BELL PEPPERS

1 Cup long grain brown rice
2 teaspoons olive oil
one each sweet green & red peppers, seeded and chopped
1/2 cup of onion diced
2 cloves - garlic minced
1 T salt - free Cajun or creole seasoning
1/2 teaspoon crushed red pepper flakes
1 cup reduced-sodium chicken broth or water
2 cooked chicken breasts halves, cooked and cubed
1/2 pound of medium frozen shrimp (ready to go)
1/4 cup fresh parsley-chopped
sea-salt & ground black pepper to taste.

1. Make rice according to pkg. directions
2. cook chicken in olive oil, cut, cubed
3. add chopped green & red peppers, garlic, Cajun seasoning 1/2 teaspoon crushed red pepper flakes, 1 cup reduced-sodium chicken broth, fresh parsley, sea salt, pepper, add defrosted shrimp, cook slowly. Stir in rice. Cookie :)

Your welcome, I got this recipe out of a magazine, it looked Good, thought I would share. Cookie :)
