Description:
Risotto is a creamy and rich rice dish cooked with an Aborio Rice. The rice is a bit different, shorter grain and has a nice popcorn smell to it when cooking.
I love mushrooms and this is one of my personal favorite rice dishes. No one in my family likes mushrooms so I don't get it very often.


Ingredients:
1 1/2 cups of Aborio rice
4 tablespoons of butter
1/2 cup of dried Porcini mushrooms soaked and drained.
6 cups of hot chicken stock
2 cloves of smashed and finely minced garlic
1/2 cup of cream
1/2 cup of Parmesan cheese
1/2 cup of diced, cooked chicken breast
2 minced green onions
salt and lots of fresh ground black pepper to taste

Directions:
Heat the butter in a deep wide skillet and cook off moisture. Cook and remove chicken breast at this time if you want to. Add the rice to the butter and cook over medium high heat till translucent. Add the garlic and
the mushrooms and quickly. 2 cups of chicken stock which has to be hot. Microwave the stock or have simmering in another pan. cook the rice over medium heat until the broth has absorbed. Try not to stir. Add 2 more cups of stock and cook until absorbed. Repeat a 3rd time.
After all the stock has been cooked into the rice I remove the pan from the heat. Stir in the rest of the ingredients gently. The rice should be very creamy. Serve right away and I hope you enjoy this dish as much as I do.
