Pork Rub

1-1/4 cups white sugar
1-1/4 cups brown sugar
1/2 cup salt ( seems like a lot, but thats what it calls for )
1/4 cup freshly ground black pepper
1/4 cup paprika


Combine; rub into pork 20 minutes before cooking.

Memphis-Style Dry Rib Rub


3 tbsp mild Hungarian paprika
2 tsp seasoned salt
2 tsp freshly ground black pepper
2 tsp granulated garlic
1 tsp cayenne pepper, or more to taste
1 tsp oregano
1 tsp dry mustard
1/2 tsp chili powder; or more to taste
1 tsp thyme
1 tsp coriander
2 tsp green peppercorns, dried and crushed
1 tsp allspice

Grind ingredients until fine and combine well. Hand rub this dry marinade on washed and dried spareribs or chicken overnight before smoking or cooking.

All Purpose Rub

1/4 cup coarse salt (kosher or sea)
1/4 cup (packed) dark brown sugar
1/4 cup paprika
3 tablespoons freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon dried onion flakes
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon celery seeds

Combine.

Try this rub:

1/4 cup coarse salt (kosher or sea)
1/4 cup dark brown sugar
1/4 cup sweet paprika
2 tablespoons freshly ground black pepper


OR


1/4 cup coarse salt (kosher or sea)
1/4 cup dark brown sugar
1/4 cup hot paprika (for a spicier rub)
2 tablespoons freshly ground black pepper
