Steak Rub

Chile-cumin spice rub:

3 dried chipotle peppers, stemmed, seeded and chopped
2 dried ancho chiles, stemmed, seeded and chopped
1 T ground cumin
1 T salt
2 t sugar

Brisket Rub

1/2 cup chili powder
1/2 cup salt
1/4 cup granulated garlic
1/4 cup granulated onion
1/4 cup black pepper
1/4 cup sugar
2 Tbsp. dry mustard
2 bay leaves

Cajun Rub and spice Mix

5 tsp paprika
1 tsp ground dried oregano
1 tsp ground dried thyme
1 tsp cayenne powder (more to taste)
1/2 tsp finely ground black pepper
1/2 tsp finely ground white pepper
1/2 tsp garlic powder (optional)

Mix spices very well, and store in an air-tight container.
Rub into your meat and allow to "marinate" for 30 to 60 minutes - covered in the fridge.
Grill.

Kansas City Rib Rub


•1/2 cup brown sugar
•1/4 cup paprika
•1 tablespoon black pepper
•1 tablespoon salt
•1 tablespoon chili powder
•1 tablespoon garlic powder
•1 tablespoon onion powder

Combine all ingredients together and transfer to an air tight container

Rib Rub


•1/3 cup paprika
•3 tablespoons dry mustard
•3 tablespoons onion powder
•3 tablespoons garlic powder
•2 tablespoons ground basil
•1 tablespoon red pepper
•1 tablespoon black pepper
•1 tablespoon salt

Combine all ingredients. Store in an airtight container. When applying to ribs, coat heavily and massage into the meat. If you want to make a sweet rub add 2 tablespoons of brown sugar.
