Also this winter I kept my pots of parsley, oregano, sage, and chives outside on the deck they are still growing and green despite our very cold 17° cold chills we had. I can not believe how winter hardy these wonderful spices really are:D So I really want to encourage everyone to grow their own, it aint' really that darn hard to do!;)

Poultry Seasoning is excellent for homemade stuffing, dressings or for fried chicken. It's a good rub for poultry, mixed into butter and then inserted between the meat and skin of a bird really flavors the meat. I usually use Bells Poultry Seasoning and this is a pretty good recipe for making it homemade.


1 tablespoon rosemary
1 tablespoon oregano
1 teaspoon sage
1 teaspoon of ginger
1 tablespoon marjoram
1 tablespoon thyme
1 teaspoon pepper

I recently posted a fried chicken recipe and in the recipe I listed Poultry Seasoning in the ingredient list. Several readers of the recipe were quick to point out that Marjoram is an excellent herb for fried chicken and how I should use it. Knowing whats in a seasoning blend is a good thing.

May I share another Poultry Seasoning:

2 tablespoons parsley flakes
1 tablespoon oregano
1 tablespoon marjoram
1 tablespoon thyme
1 tablespoon rosemary
1 tablespoon celery leaves
1 tablespoon ginger
1 teaspoon pepper
1 teaspoon sage

Mix together well and sprinkle on chicken.


or another:

3 teaspoons dry mustard
1 teaspoon garlic powder
3 teaspoons onion powder
1 1/2 teaspoons white pepper
1 teaspoon thyme
1/2 teaspoon basil
3 teaspoons paprika

Mix together and sprinkle on chicken.



It's a matter of personal preference - but it is so much fun to create!
