Recipe

1 medium size cauliflower
1 " onion
2 cups tomato sauce or chopped tomatoes
2 bay leaves
1/2 cup virgin olive oil
1 chopped carrot
1 stick of cinnamon
1 tsp sugar
2 tbs of red wine vinegar
, salt and pepper to taste

Wash and cut the cauliflower in small bouquets, drain very well.
Saute the cauliflower and the carrots for few minutes, add the
chopped onion and let the vegetables cook in the oil for 7-10
minutes. Add the cinnamon salt and pepper and vinegar.
Let it evaporate for one minute. Add the tomato sauce and
sugar and one cup of warm water.
Let it cook till tender and till the water evaporates.
The vegetables should be just with the oil.

This is a great dish to eat just with fresh bread and piece of good
feta cheese, a complete meal in its self.

MAGOULIANITISSA, this looks like an excellent recipe. Very interesting. I will definitely give this a try. I might add a small dash of hot pepper flakes to it too just to give it a little kick.
