We are cooking out on the 4TH of July, tonight I made my Deviled Eggs and a Tortellini 3-Bean Pasta salad with Red Roasted Red Peppers, from a jar I diced up and a Tuscan Italian Dressing, Balsamic Vinegar. I had 2 samples of this pasta salad at the store & decided to make it.

For desert I bought a Angel Food Cake I'm adding Whip Cream and Fresh Strawberries, another sample I tried at the store, so Good! I thought this would be a Good light Desert.

All of the wonderful menus are making me hungry again.

Our dinner went ok. Jon's brother and two of his kids came so it was 7 of us all total.
We had burgers, hotdogs and a few sides. I made homemade ice cream. Jon's brother and kids are so picky I was suprised they all liked the ice cream. I took a sweet whole pineapple and cut it up to go with the desserts. My FIL ate that instead of ice cream.
It has pouring all day and night so we havent heard much fireworks. Blissfully quiet. Where we live in town they usually have them going all night.

Mm, Homemade Ice cream with Fresh pineapple sounds really Good!

We had a really nice 4Th of July, did some steaks on the grill & salmon with my 3 bean pasta tortellini salad. I put chips & dip out with some black olives & cheeses cut into cubes & Deviled Eggs with olives & pimento's on top. We had my Mom & Brother over, it rained on & off all day so we ate inside this year. For desert I served Baily's & coffee with the Angel food cake with whip cream & strawberries I posted a picture of. My Mom bought a Watermelon I cut up for desert. Their were Fireworks around us, it was Fun! Cookie :)

I just grilled steak burgers and dogs along with corn on the cob. We also had water melon but we didn't even crack it open. Of course we had all the chips and salads on the side.
I wanted to make a potato salad from the past. My Grandmother made it so from memory I tried searching recipes and sites for something that came close. I failed miserably. My Grandmothers salad had beautifully thin sliced potatoes that did not fall a part. The dressing was some time of vinaigrette that was not to vinegary or sweet. My potatoes, red, steamed, to just tender still cut like mush and I couldn't cut them thinly. My dressing tasted like sweet pickles. Everyone liked it but it wasn't what I wanted. I am thinking I need to cut thin potato slices raw, and then maybe either saute them or bake them until just tender in the vinaigrette. Hopefully I can figure it out by the next Fourth Of July..

Cookie, I always make my strawberry short cake like that. I like to mix my strawberries with sugar and let them sit for a few hours to draw out the juice. I get a nice strawberry syrup to soak into the cake.
