I just made these today, they turned out really Good.

You probably could skip the coconut and put in extra nuts maybe even (1 cup walnuts just a suggestion.) I only used 1/2 cup of slivered almonds. I put in extra amaretto I didn't really measure the amaretto lol. Once I put in the flour I folded in more amaretto to soak up the flour. The recipe only called for 1 Tablespoon Yes, it's only 2 teaspoons almond extract.

If you do make these cookies without coconut let me know how it turns out, Good luck, Cookie :)

Okay... speaking of romantic meals... one of my fav fun celeb cookbooks is Mo'Nique's "Skinny Cooks Can't Be Trusted!".

It's loaded w/ EZ, down-home dishes (some have given the recipes less than awesome reviews- but I personally like the book for it's hilarious wit & wisdom!) and also candid, unabashed frankness about romance and dating!

Mo'Nique is a plus-sized, lusty, sexy gal who shares a lot in her book about how to get a man! In fact, the first three recipes in her cookbook are called: 1.) "The Man-Catcher" (a fried chicken/peach cobbler spread) 2.) "Breakfast for the Perfect Morning-After" (a table set w/ stacks of blueberry hotcakes, herb-scrambled eggs, salty smoked meats, fresh-squeezed juice, etc...) and 3.) "Breakfast for the CRUMMY Morning-After" (super-lumpy oatmeal to be served when... you-guessed-it! You've invited someone over who turned out to be not quite "all that"! Ha!)

I'm sure it's hilarious but I do find the saying "you can't trust a skinny cook" to be a little unfair.
