I have been baking from scratch for 7 months bought some new rice flour and my pizza dough and my pie crust wants to seperate and crack i dont know what to do please help or send ideas also my biscuits want to crack really bad. maybe my rice flour is not been ground up fine enough please help me!

Rice flour does not have the gluten to hold stuff together.
Do you have a gluten allergy, wheat etc.?

When adding the flour to the batter, do not overmix or it will produce too much gluten. Too much gluten causes a cracked and domed top. However, use a kitchen timer to help you keep track of the mixing time.
