Those titles by our names are just based on how many times we have posted. I'm just a homecook. We do have some chefs on here though.
Ask anything you want. Everyone here is eager to help. Things have kinda slowed down some since summer came. People are spending more time enjoying the outdoors I think.
Since Im from KY I love southern cooking but I also crave Italian. Those are the two styles I cook most often.

Jeanne vegetarian cooking is easy, you could buy some books from Amazon.com (so that you won't have to spend a fortune;)) and just jump right in.

I guess the thing I would be most concerned about is cooking the proper starch combos to create complete proteins in a meal for example dry beans with rice eaten at a meal would be a whole protien. There is no reason to give up flavor and enjoy your foods if you go vegatraian! Also another thing to remember is you can just narrow your meat based meals down to a few times a week and just go vegetarian more than you normally would. If you have access to a fresh produce market buy freshest ingredients possible. Also you could make more stir-fry type dishes and use very small amounts of meat I have found that if you use sesame oil in a fried rice dish it tastes so authentic (Just like Chinese take-out!) . Do not forget fish and shell fish and alternative protien sources over the typical beef and pork meals. Do not leave out cheese and eggs as good protien sources!!!

There is a member here named Jfain she does alot of vegetarian meals I am sure she will be greeting you soon and will give you some more pointers! One of my favorite vegetarian meals besides rice and beans is a veggie pizza loaded with lots of cheese, sauce and fresh diced veggies:p
