Recipe: Smoked fish


1cup – mortons sugar cure
2- Bay leaves
1tsp – Black pepper
1 tsp, - ¼ cup Brown Sugar
½ Gallon – Water
Fresh Apple, Alder, Cherry, Tree Branches
Soak the fish over night in the brine, next morning rinse brine off the filets, and pat dry, let fish stand for about 1 hour before smoking. Smoke 4-5 hour depending on your smoke.
190-200 deg F

This does sound good. I love smoked fish.
