We love a dish we call “yellow chicken and rice”. Start with a whole chicken cut it up and put it a large Dutch oven, cover with water and boil until done. Remove chicken from broth and strain. Return broth to Dutch oven and bring to a boil. Add a large bag of Mahatma Saffron yellow rice. Chop a small jar of Spanish olives and add to the rice. Cut some of the chicken and add as well. Salt and pepper to taste. This is a great one pot meal!

I will try it. I love Italian dressing. I pour it on everything lol.
We went to Jons friends for a cookout and his buddy made a boneless, skinless chicken breast on the grill for me. He cooked that poor piece of chicken 2 1/2 hours. It was so tough lol. I took my plate to the table and was so happy to see a big ol bottle of Italian dressing. I drown that piece of chicken with it lol. Between that and my laying a nice juicy piece of tomato on top of each bite of chicken I got it eaten.

I have seen that rice at the store here. Your recipe sounds yummy.
I will have to give it a try.

I have a similar recipe that uses skinless boneless chicken breasts and adds in some orange segments. I agree it's a delicious dish!
