What amazes me though is that I watch her prepare dishes step by step so that I can make her dishes just like she does, and for the life of me there is some secret something extra special love or something that I miss that she puts in that gives her dishes that extra special taste. She is just good that's all.

Yup - swiss steak - my kids would devour it and sop up the leftover juice with white bread. I should fix it again next time they are home.

This is an old one from my file:

Persimmon Pudding

1 egg
1 cup persimmon pulp
1/2 cup sweetened condensed milk
1 tsp vanilla extract
1 Tbs melted butter
1 cup granulated sugar
1 cup all-purpose flour
2 tsp baking soda
1/2 tsp salt
1/4 tsp ground cinnamon

1. Preheat the oven to 300 degrees F (150 degrees C). Butter a 1 1/2 quart casserole dish.

2. In a large bowl, whisk together the egg, persimmon pulp, sweetened condensed milk, vanilla and melted butter. Combine the sugar, flour, baking soda, salt and cinnamon; whisk into the persimmon batter until well blended. Pour into the prepared baking dish.

3. Bake for 1 hour in the preheated oven, or until the pudding is set and the top is lightly browned.

Servings: 4
