Hello everyone! :)

Just wanted to know if anyone knows how to re-fry chinese fried rice. I always save the leftovers from my take-out in the fridge, and want to know how to fry it up good again after it has been refridgerated!! :o

I have no luck with leftovers!!

Yes, heat the rice slow in a non-stick skillet or re-heat in a microwave and it will be fine.

I tried several times to make my own fried rice, and before quiting trying came to the conclusion that the rice needs to be day old and refrigerated to cook right. So it's re-heated food in the first place (or so I think).

As much as possible I do not re fry fried rice, but here's what I sometimes do, I heat the skillet (if it is a non-stick one) until it's totally dry then put a little oil,spread the oil in the skillet, then watch for a little smoke that's coming out, that means that the the skillet is already hot, (coz if you put the rice already, they're gonna stick in the skillet), then put the rice and just keep on frying and turning until you think it is ready.

A tip I learned from my father, always use high heat when frying rice and low heat when frying fish.

Another tip is if you are frying rice and then most of the rice get sticky or stuck or whatever you call it in the skillet, just get an egg and beat it then pour it over the rice, then turn it several times and you'll see that the rice wont stick to the skillet anymore.

Oh and another one, if the rice came from the fridge and a little hard, just sprinkle a little water on the rice before frying it.

yes a little water should do the trick -- if not, try a little LITTLE LITTLE butter or some soy sauce if you like it.
