Wednesday, 1/6 Mom and I made simmered round steak w/ mushroom gravy, smashed red-skinned spuds, buttered deep-green peas, cloverleaf rolls and had keylime yogurt & oatmeal cookies later for dessert while watching tv.

That sounds superb to me! I love steak with mushroom gravy! :)

Sounds good to me Kevin. Actually I've had a stew made from venison for the last two days. Wife won't touch venison so I have to try to eat it all. Kinda tired of it now and want something lighter so I will do a grilled chicken breast with noodles and marinara sauce.

Tomorrow we are having lamb, roasted garlic mashed potatoes, yeast rolls & salad.
Today I had a roast beef sandwich and Jon had pulled pork sandwich.

I made Greek Lasagna a couple weeks ago, it turned out really Good. I'm stir frying meat mostly chicken with frozen veggies with different seasoning blends and oils. Now I want to make some Turkey chili in the next few days, it's been cold here good casserole weather that's for sure! Cookie :)

Sounds good Cookie!!!

I painted the bathroom tonight so didn't want to cook. Mom and I did one of the $10 Pizza Hut Pizzas. For CHAIN pizza- I always liked their pies. Over they years though they made some "healthy" changes that caused the flavor to suffer a lot. So these days I don't too much care for their product. But for ten bucks- versus the usual $20... even medocre pizza is good pizza! :)

Kevin we have a place here called Cici's Pizza, and even for $5.00 Buffet you can still have them made-to-order the pie you want and they will bring it to your table, you do not have to eat the stuff on the buffet line. The place is a deal, and some of their pies are truly good stuff. A nice place to take a really Large Hungry family!!! Like mine LOL At least we don't go broke in going out for pizza! When it was just me & my granddaughter we would order their $5.00 large pie to go and we'd think we'd hit the jack-pot, died and gone to heaven, and still have left-overs for the next day!

I like spinach mixed in with my rice. The first time my Greek friend Karatzas introduced me to this simple dish just floored me it was absolutely delicious!

We went to Sams yesterday. I splurged on some center cut salmon fillets and a chunk of parm cheese. I also picked up some spring mix salad and tomatoes. For lunch today I had salmon I seasoned with salt, pepper and coated with agave nectar. I cooked it on my indoor electric grill. The agave made a nice sweet crust on the outside of the salmon. It was delish with a salad. I also picked up a nice fat pineapple which hit the spot for dessert.

Wow- now that's what I MISS, janie! Some good SALMON! Gotta get me some! BTW- I'm glad to know you enjoy salmon... soon there'll be a l'il surprise headed your way, dear! :)

[alert - thread theft in progress]

anybody done steelhead?

from my reading I understand it's DNA-wise the same fish as a rainbow trout but "sea going" -

looks a lot like salmon - but subtle difference in taste - it's one of my fav's - been known to rearrange the entire weeks meal plan when I find that fresh in our market (our fishy people clearly label stuff - wild caught / farmed / frozen / never frozen / etc)

in season we get the wild never frozen stuff. of course, you can't eat for the next week 'cuz you blew the whole budget on one fish, but dang it's good. now and then off-season (?) I've gotten the farmed version - it's still good but not quite up to it's wild cousins.

Today we had New York strip steak. I made the salad, it had a can of black olives, chick peas, red Bell pepper diced up, shredded 2% sharp cheddar with lite blue cheese dressing. We had a bottle wine Riesling with it. I bought mustard potato salad to go. Cookie :)

Yeah- LOVE steelhead, Dilbert! In Alaska, the terminolgy of steelhead constantly bounces back and forth... seems for a while it's termed a member of the trout family... then a few years down the road it's termed a member of the salmon family. I have had some delicious steelhead in my day. I always consider it kind of a "weak" tasting salmon- or a "stronger" tasting trout. Man... I can just hear it sizzlin' in the cast iron skillet now!

>>terminology

somewhere a while back I read that rainbow and steelhead are genetically the same fish - one would think, as reading 'genetics' is tricky to do in a open boat, the work has been accomplished in a lab and should be fairly definitive, but ....

AK apparent current thinking is "same" -
Rainbow Trout: Wildlife Notebook Series - Alaska Department of Fish and Game

fresh water trout has always been pretty high on my menu list - the steelhead are really good eating.

Great source of info, Dilbert! :)

Here's another that illustrates the often changing and mix-match of "confusion" out there, that I referred to earlier... and when it comes right down to it- what matter does it make? As you say "It's GOOD eatin'!" And I'm in FULL agreement!

Steelhead Trout Salmon | Alaska Salmon

Today for Sunday supper I made a large homemade pizza. It had sausage, pepperoni, fresh grated parm, moz, pepper rings, kalamata olives & mushrooms. I made an Italian style salad with spring mix, cherry tomatoes, chunks of parm cheese, hard salami & chickpeas in it and a balsamic dressing. I took along some crunchy bread sticks and brownies for dessert. I made several smoked salmon wraps for my father in law to snack on tomorrow. He and Jon and had one each with their pizza. I smoked salmon in the stovetop smoker. When it cooled I flaked it apart and mixed it with some ranch dressing, scallions, salt and pepper. Spead it onto some warmed tortillas, rolled and cut on the diagonal.
