I made this one for Sunday supper. We all liked it alot.

Garlic Rosemary Chicken

Ingredients

1 (5 1/2-pound) whole chicken, rinsed and patted dry
1 1/2 teaspoon salt
1 teaspoon pepper
20 clove whole garlic, lightly crushed
1/2 pounds yellow onions, sliced into 1/2-inch rounds
1 pounds about 14 red potatoes, halved
1 tablespoons chopped fresh oregano
1 teaspoons minced fresh rosemary
1 cups small green fresh olives such as picholines, cracked
1/2 cups fresh lemon juice


Directions

Sprinkle the chicken skin and cavity with 1/2 teaspoon salt and 1/2 teaspoon pepper and place 10 garlic cloves inside. In a slow cooker, layer the onions and potatoes and sprinkle with the remaining salt, pepper, 1/2 of the oregano, and 1/2 of the rosemary. Place the chicken, breast-side down, on top of the potatoes and onions in the slow cooker. Sprinkle with the remaining rosemary and oregano. Add the olives, remaining garlic cloves, and lemon juice. Cover and cook on low for 6 hours. Pull meat from the bones and serve hot with the broth and vegetables.

Yesterday I smoked whole chicken wings I had soaked overnight in Buffalo sauce. I then gave them another soaking in buffalo sauce and crisped them under the broiler a bit. Jon loves them prepared that way.
Today we totally went lazy and ate at a restaurant.

Tonight I settled-in front of the TV in my jammies and watched all night long- LOVE being lazy- don't get nearly enuf of that, these days!

For supper I had leftover roast chicken shredded into an omelet w/ cheddar and green chilis, topped w/ salsa and sour cream. Oh- and two HUGE oatmeal cookies!

Last night was a sort of Rice Pilaf with browned ground beef that I dreamed up to get a meal out of pilaf. 1 cup rice browned in a saucepan with 1/2 onion and some garlic. I use 2 cups Herb-Ox beef broth plus 1/2 cup water and after the rice is done add about 2/3 Lb browned ground beef. I can have this 3 or 4 times. It also has basil, oregano, pepper and 1 tsp salt sub. Last night the remains of a red bell pepper fell in there also.

I made Grandad's Special Lasagna from my Country Living Flavors of Country Cooking cookbook for Sunday supper today. It was a meatless lasagna with a marinara and bechamel sauce with tons of cheese. My father in law and my hubby loved it. We had breadsticks, marinara dipping sauce, chopped veggie salad & chocolate chunk brownies for dessert. I made 2 batches of peanut butter fudge for my sis that her hubby picked up for her this evening. I made my brother a roasted chicken and hush puppies his wife picked up for him today lol. My kitchen is closed for the day lol.

Gee Janie. I wish I was from Kentucky so I could just put my order in every morning and pick it up on the way home every night.
