They're yummy aren't they, John? Traditionally they're whole heads of iceberg hollowed-out and packed full of crumbled bleu cheese crumbles, then dressed w/ thick, creamy blue cheese, then they've got crumbled bacon,, tomatoes and whatever other garnishes one likes. I like doing an Alaskan version w/ kippered salmon. In busy, hectic ommercial kitchens they were nice salads for doing ahead and pre-plating for large numbers- especially for busy holidays and banquets.

Yea. The only drawback is that they usually require a thick creamy dressing not vinegar and oil. I do have a "creamy Italian" recipe that is fairly low sodium and taste great that I use on wedges or sometimes just a fast orange marmalade dressing works.

Today I made fried chicken wings I had soaked in buttermilk, hotsauce and other seasoning for 24 hours. I made two chocolate custard pies. One for my hubby to keep and one for Sunday dinner. I put chicken legs and thighs into the same mixture as the wings. I plan to fry them up for Sunday supper with biscuits, herb and garlic roasted potatoes and mac and cheese. Yesterday I made baked tortellini with bread sticks.
Tomorrow we will have leftovers ..chicken wings or tortellini. My sis's hubby is going to be in the area tomorrow so he is stopping by to get her another double batch of fudge. I swear I thought she would have been sick of it after the last batch. She ate it all in two days lol. If I ate that much sugar my jeans wouldnt pull up past my knees.

It all sounds really scrumptious, janie! :)

I'm baking pies Sunday night for my work's "Pi Day" on Monday. Making a couple Butterscotch Meringue Pies and also to shock my co-workers and get them to think outside the box a bit I'm making a free-form mixed berry gallette, and a savory onion and roquefort tart.

For supper last night Mom requested that I make beef stroganoff w/ some leftover roast beef- so I put the beef into a rich gravy and added mushrooms (and the secret Russian ingredient- chopped dill pickles!) then realized I had no egg noodles- nor any pasta whatsever, so we served it over mashed potatoes- and it was quite good that way!
