To which Island do you refer to IC? Might it be Catalina? A truly splendid Island to visit I must say. The trip there is nice, but especially so if you happen to see some whales en route!!!

I like to make a really fresh quick sauce from fresh tomatoes. I skin and dice up about 8 plum tomatoes. Salt well in a bowl for about a half hour, rinse and place the tomatoes in a strainer back over the bowl. let the tomatoes sit for another 15 minutes or so reserving the juice. I then saute a few diced garlic cloves with some hot pepper flakes, add the reserved tomato juice and cook down. Add the diced tomatoes, 1/3 cup of olive oil and heat through. Add a half pound or so of cooked fresh pasta, salt and pepper to taste . I also enjoy adding sliced olives to the tomatoes when heating them through.

Cath- I've never been- but I have friends who got married on Catalina Island and it sounds like I missed a truly beautiful scenic and unforgettable event!
