I love omelets. I find a good way to use up leftover ham is to make ham and cheese omelets. It doesn't take much effort to melt a little butter in a non stick pan, whip up 2 eggs, pour the eggs over the butter, swirl the pan to coat the bottom, add diced ham, and cheese of choice on top of the egg as they set up and then roll the eggs over the ham and cheese. Season with a bit of salt and pepper and it's an omelet for any meal.
I've always put diced ham in homemade mac and cheese - it is so good!

Mac-Cheese that's a Good idea but I cant's do that because I made pasta shells already with shrimp for my side dish yesterday. I was thinking about eggs and ham to however I don't have any eggs left because I made deviled eggs for Easter.

I think grilled cheese sandwiches are becoming very popular again. When I was a kid, a grill cheese sandwich consisted of 2 pieces of buttered bread with a hunk of velveta between the slices and then fried to a golden brown.
Today with all the different cheeses available for use the possibilities are endless.
I like to butter a couple slices of sour dough bread, layer slices of Swiss cheese and ham between the bread slices and grill. I am a tomato freak during the summer months as they ripen. I love to add slices of a ripe garden grown beefsteak tomato. During the colder months and when tomatoes are not in season I like to add sliced grape tomatoes.
