When I was a kid, my mother, a Southern Girl always made us a big pot of soup with left over ham.The soup consisted of water, diced ham, potatoes cut into nice sized chunks, diced onions and lots of green beans. Salt and pepper to taste.
This was a year round comfort food. Something about how the green beans and ham flavored the potatoes. The broth was so good.
I remember once my mother made this soup with salt pork. I was doing the dishes after the meal was over. I liked how the flavors of what was cooked had flavored the salt pork and as I did the dishes I was eating the salt pork from the pot. How disgusting is that? I think I actually overdosed on the fat because I became so sick. I think actually had salt pork coming from my pores, I was so sick, lol.
Today, I stick to just using ham. Much safer that way.

Cubed ham and end pieces go into the crockpot for either beans or Navy Bean soup. Larger pieces get sliced thin for sandwiches, thicker for dinner or breakfast ham slices.

I love scrabled eggs between the cheese, or a thin slice of ham and scrambled egg - or even a small western omelet between 2 slices of cheese before grilling.

I like to use my left over hambone for a soup. I put carrots, onions and celery in a pot with the ham bone and a couple of bay leaves, cover it with water and simmer until the liquid is flavorful. Then I pull out the bone and add some cubed ham, potatoes and chopped kale to the pot. This is my go to soup for left over ham.
