with Easter being over - many have had ham - what are you doing with the leftovers?

definitely ham salad here with some of it!
 
Ham sandwiches, for sure. I Love ham slices cold. I was thinking about split pea soup however I'm not that hungry or ambitious to start cooking again. I hope my Mom wants some! Cookie :)
 
I love ham salad. I might buy a ham steak just to make some since we didn't have lamb for easter.
 
Ham Salad

I am a ham salad addict. I don't really care for ham on the plate but love to make salad from it.
I have a grinder for my mixer. I just run the ham, some onions and celery right through it. Add my mayo, not to much because I don't like it mushy. Black pepper (lots of pepper)and some pickle relish, horseradish and I'm good to go. Simple and delicious.
 
Mac And Cheese

I like to take a regular Mac and Cheese recipe for baking and mix diced ham and tomatoes into it. It takes Mac and Cheese to a whole new level.
 
Ham And Cheese Omelets

I love omelets. I find a good way to use up leftover ham is to make ham and cheese omelets. It doesn't take much effort to melt a little butter in a non stick pan, whip up 2 eggs, pour the eggs over the butter, swirl the pan to coat the bottom, add diced ham, and cheese of choice on top of the egg as they set up and then roll the eggs over the ham and cheese. Season with a bit of salt and pepper and it's an omelet for any meal.
 
I've always put diced ham in homemade mac and cheese - it is so good!
I love ham salad as well - and bologna salad, turkey salad, chicken salad - I love to work with leftovers!
I made my ham salad with the food processor today instead of the meat grinder.
 
Mac-Cheese that's a Good idea but I cant's do that because I made pasta shells already with shrimp for my side dish yesterday. I was thinking about eggs and ham to however I don't have any eggs left because I made deviled eggs for Easter.

I really don't have that much ham left a-lot of it is bone. I should really make split-pea soup with it. Cookie :)
 
Grill Cheese Sandwiches

I think grilled cheese sandwiches are becoming very popular again. When I was a kid, a grill cheese sandwich consisted of 2 pieces of buttered bread with a hunk of velveta between the slices and then fried to a golden brown.
Today with all the different cheeses available for use the possibilities are endless.
I like to butter a couple slices of sour dough bread, layer slices of Swiss cheese and ham between the bread slices and grill. I am a tomato freak during the summer months as they ripen. I love to add slices of a ripe garden grown beefsteak tomato. During the colder months and when tomatoes are not in season I like to add sliced grape tomatoes.
 
Ham Potato and Green Bean Soup

When I was a kid, my mother, a Southern Girl always made us a big pot of soup with left over ham.The soup consisted of water, diced ham, potatoes cut into nice sized chunks, diced onions and lots of green beans. Salt and pepper to taste.
This was a year round comfort food. Something about how the green beans and ham flavored the potatoes. The broth was so good.
I remember once my mother made this soup with salt pork. I was doing the dishes after the meal was over. I liked how the flavors of what was cooked had flavored the salt pork and as I did the dishes I was eating the salt pork from the pot. How disgusting is that? I think I actually overdosed on the fat because I became so sick. I think actually had salt pork coming from my pores, I was so sick, lol.
Today, I stick to just using ham. Much safer that way.
 
Cubed ham and end pieces go into the crockpot for either beans or Navy Bean soup. Larger pieces get sliced thin for sandwiches, thicker for dinner or breakfast ham slices.
 
I love scrabled eggs between the cheese, or a thin slice of ham and scrambled egg - or even a small western omelet between 2 slices of cheese before grilling.
 
I like to use my left over hambone for a soup. I put carrots, onions and celery in a pot with the ham bone and a couple of bay leaves, cover it with water and simmer until the liquid is flavorful. Then I pull out the bone and add some cubed ham, potatoes and chopped kale to the pot. This is my go to soup for left over ham.
 
Soup Weather!

I think I'm making spilt pea soup with my ham bone, or put it in the freezer I have it in a zip lock-bag now. It's really a chilly wet day here in Chicago, perfect for making soup. Cookie :)
 
By coincidence I had a country ham salad a few weeks back the likes of which I hadn't tasted before. It was part of an appetizer, at a friend's birthday party, consisting of fried green tomatoes with country ham salad and sauteed green onions.

The salad was very thick. The binder obviously wasn't mayo, but something heavier than that. I haven't been able to quite replicate it. But, after much experimentation, here's what I came up with:

Country Ham Salad

4 oz cream cheese at room temperaturte
Splash buttermilk
3-4 oz country ham in small dice (1/4-3/8-inch)
2 scallions, whites and green parts, sliced thinly
1/4 cup thawed frozen green peas
1 tsp whole grain mustard
Pepper to taste

Mix the cream cheese, ham, and scallions until well blended. Thin with a splash of buttermilk if necessary. Stir in the peas, mustard, and black pepper.

Chill until ready to serve.
 
I brought a few slices of ham home for sandwiches.
I can't eat ham so a few slices for Jon is plenty.
