Have you ever heard of- and what are your thoughts on Boiled Eggs in Lasagne? Someone asked me- and I recall seeing a pic in a cookbook by Lorenza De'Medici once that had them in a lasagne, but I've never tasted it- never made it that way, and frankly never seen it served. I know there often are many varied versions of things, and that sometimes there are economical "peasant" or "farmer" versions of dishes in all countries and types of cuisine... Are you (or anyone else?) familiar at all?

Of course I am. Every family has made it that way at one time or another. They also use hard cooked eggs as a filling for braciole. In our home we prefer not to use hard cooked eggs in either - but it is good. Yes I have had it - I've made it. Many snub their noses at it not realizing that most pasta dough is made with eggs. Also - there are many frittatta recipes that call for eggs and sauce - it's quite common. and don't forget the egg and tomato recipes - it's all the same - all tastes good.

Now as far as I go - sauce goes with anything! Sauce is like chocolate - even though I love chocolate - sauce is the cure-all for everything. And sauce goes well on anything!

If I end up in the hospital - my IV bottle would have to be sauce - it has replaced the blood in my body throughout the years.

BTW - I would give anything to live on the D'Medici estate! And I like the way she cooks.

The next time you are making lasagna - take one cooked noodle and make one filled with egg - and roll up (like a lasagna roll up).
I'm interested in knowing how you like it.
