Kevin. when I make my chicken and dumplins, I use my mothers southern recipe which calls for making a dough with just water, flour and salt. It's rolled out thin and then cut into rectangles. Is this what is considered an Amish noodle? Lol. It does the same thing with thickening the sauce into a gravy.

They are not bad at all, you just have to cook them long enough to remove the "gummy & doughiness" they are good. As a matter of fact there is a canned Chicken & Dumpling put out by "Sue Bee" that is the flat dumplings and they are good too! I prefer the drop dumplings and the light fluffy centers that absorb the broth!
