Wonderful!! and by putting the meat in the crockpot it made it easy to shred it. I'm glad to hear that they turned out for you. It's too bad you couldn't find banana leaves - they are so much bigger! Did you get enough to freeze some for later??

The crock pot was the way to cook the meat and made it easy to shred. I'm not really a crock pot person but it was the perfect solution for this recipe.
I ran out of the corn meal batter with about 1/2 pound of meat mix left. That's because I used too much batter in the beginning. Might use the leftover meat to make homemade burrittos. If I did this again as a novice I'd make 8 cups of corn meal mixed with 8 cups water and 4 tsp baking powder. But if careful the 6 cups mentioned above would be plenty.
And yes, lots of tamales left over. 2/3 are in the freezer and 1/3 for a Sunday lunch tomorrow.
These were worth the effort, and had no real visible fat. Quite unlike the canned varieties of tamales which are soaking in fat.

Oh, and it's always nice to make a new recipe, and especially a complex one, and have it turn out.

In case you're interested I found a source of banana leaves. They have them in the frozen food section at the Asian market. I havent opened the packet yet, but they're large and I think each can make several nice sized tamales. I'll report back when I use them.
