Chocolate Chip Mundel Bread

* 4 eggs
* 1/2 cup oil
* 1 cup sugar
* 3 cups flour
* 1 tsp vanilla
* 2 tsp baking powder
* 1 cup chocolate bits
* 1/2 cup nuts optional
* dash of salt

Pre heat oven to 350

Beat eggs and sugar until whipped
Add to bowl, oil, vanilla
Add flour, baking powder, salt, choc. bits mix.

Mixture is sticky and gooie

Place on cookie sheet by plopping spoonfuls of batter to form a large long loaf, you can either have two long loafs or turn the cookie sheet and get 4 shorter loafs.

Bake for about 20 min, the logs will become a little brown......

Use two spatulas and pick up the loaf to a cutting board and slice the loaf on an angle. Replace the cookies to the cookie sheet and heat another 5 to 10 min. This allows the cookie to brown and get crunchy.

Be careful not to burn your fingers on the melted choc. bits.

Remove cookies and place in tupperware, but do not cover until they cool off or they will lose that good crunch.

Hammantashen

* 1 cup of sugar
* 2 cups of sweet butter or margarine
* 2 teaspoons of vanilla
* 1/8 teaspoon of salt
* 3 eggs
* 6 cups of flour (all-purpose)

In a large mixing bowl, cream together the sugar and the butter. Beat in vanilla and salt. Add eggs one at the time. Gradually blend in flour. Chill dough in refrigerator for 2 hours until firm enough to roll and handle. Roll out pieces of dough to 1/4 -inch thickness. Cut rounds with a 4-inch cookie cutter. Place a teaspoon of filling in the center of each round. Gather the edges of the dough around the filling and pinch at 3 points to secure seams firmly. Bake in a preheated 375 degree oven for 15-18 minutes. Cool on wire racks. When the hammentashen come out from the oven, the dough will be slightly soft, but it will firm as it cools.

Mama is Mundel Bread similar to Biscotti? I seem to recall that I've had it and like Biscotti, it was a nice crunchy dip-in-tea type treat. :) Don't know if I'm thinking of the correct Mundel or not.
