My fastest things are quesadillas (just top tortillas with cheese, beans, chicken, beef, whatever and cook in pan until melted and good) and apricot chicken. For the chicken I just mix a jar of apricot jam with a couple of T of mustard and a couple T of water, and some rosemary. Then I pour that over some chicken breasts or thighs, cook in a baking dish at 350 until done, and serve over rice.

chicken tortilla soup. sounds complicated, but it's just opening a bunch of canned veggies and beans and putting them in a stockpot with diced chicken and rice, then serving up with sour cream, salsa, and tortilla chips. Excellent leftovers, too.
That sounds almost like taco soup:
1 can rotel
1 can black or pinto beans
1 can corn
1 pound browned ground beef
1 envelope taco seasoning
1 envelope ranch dressing mix
Serve with cornbread.

Yep, taco soup but with rice and diced chicken instead of ground beef and ranch dressing. shhh! my husband thinks it's a separate dish from taco soup, so I can make them both in one week and he won't complain that I'm serving him a duplicate meal.
