Panini - 15 - 20 minutes

Penne pasta in oil with sundried tomatoes and marinated artichokes - 25 minutes - including making a green salad

Macaroni in oil with garlic - 25 minutes including making a green salad

Antipasto - assorted greens, tomatoes, radishes, cukes, cheeses, ham, salami, olives, egg, celery, carrots, etc. - 25 minutes (due to all the slicing and chopping)

Club sandwiches and BLT's - 15 to 25 minutes

Basic casseroles - 30 to 45 minutes

Italian sausage, peppers and onions - 30 - 45 minutes and boil corn on the cob at the same time

Sausage and kraut - 40 minutes

Oven baked fish and baked potato slices - 20 minutes

Macaroni and potato salad can be assembled in 30 - 45 minutes or less

And what's wrong with Brussel sprouts????? I love them (but my body doesn't! LOL) that's why I call them "killer cabbage balls from outer space"

Chilimac is really easy as well. Just drop in a can of your favorite chili after mixing your mac and cheese.

Beef stroganoff.

Brown a pound of ground beef (or turkey) with some chopped onion. Add some thyme, oregano and marjoram, a can of cream of mushroom soup and half a can of water. Bring to a simmer. Just before serving, add a tablespoon or two of sour cream. Serve over rice or egg noodles.

I also often keep taco meat around. Just brown some ground beef or turkey and follow the directions on the taco seasoning packet. That should be enough for 2-3 meals. With it you can make:

Quesadillas
Taco salad
Nachos
