Mamamia Mamamia! Those are a lot of recipes. That fried mozzarella recipe looks delicious, I'm DEFINATELY going to try it.

Smothered Chicken is pretty easy, though not quick by any means. I'll quickly explain how to make it:

Ingredients:
Boneless skinless chicken breast
Cream of mushroom soup
Cream of chicken soup
1 pat of butter

Preheat oven to 350. In a glass baking dish place thawed boneless skinless chicken breast and season normally (I usually use seasoning salt, garlic salt and pepper). Pour cream of chicken soup, cream of mushroom over chicken and spread evenly --you can add more or less depending on how much chicken you're making. I tend to like to use cream of mushroom better than cream of chicken, but my husband likes to mix the two , and I must admit it turns out pretty good that way. Put one pat of butter in the middle and place in over. Periodically stir and check the chicken. Once chicken is cooked all the way through pull out, and serve with some white rice --use the sauce as a gravy. It's really good. It usually takes 45-60 minutes to cook all the way through for a serving of 3.

Dip cheese sticks in egg white, coat with crumbs of choice and bake in the oven?

Yeah, maybe you could cut up "nuggets" of low-fat mozzarella, coat with crushed cornflakes, and bake?

That fried mozzarella looks ILLEGALLY good.
