12 tbsp sugar
1 tbsp water
8 egg yolks
1/2 cup sugar
1 quart half and half
pinch of salt
Place the sugar and water in a small heavy sauce pan.
Heat over medium heat until the mixture looks like a golden syrup.
Pour this caramel into a shallow baking dish, and chill until firm.
Beat together the 8 eggs yolks, and 1/2 cup sugar.
Add 1 quart hot half and half (heated in a double boiler) and cook until sugar dissolves and mixture coats the back of a spoon.
Pour over the chilled caramel.
Set the dish in a pan of hot water and bake at 325 degrees F until the custard is set, about 1 to 1 1/2 hours.
Cool and chill.
