  • 12 tbsp sugar
  • 1 tbsp water
  • 8 egg yolks
  • 1/2 cup sugar
  • 1 quart half and half
  • pinch of salt
  1. Place the sugar and water in a small heavy sauce pan.
  2. Heat over medium heat until the mixture looks like a golden syrup.
  3. Pour this caramel into a shallow baking dish, and chill until firm.
  4. Beat together the 8 eggs yolks, and 1/2 cup sugar.
  5. Add 1 quart hot half and half (heated in a double boiler) and cook until sugar dissolves and mixture coats the back of a spoon.
  6. Pour over the chilled caramel.
  7. Set the dish in a pan of hot water and bake at 325 degrees F until the custard is set, about 1 to 1 1/2 hours.
  8. Cool and chill.
