I picked up a couple of small fresh pineapples at the store today. They were on sale for $2 each. I have already eaten one by itself lol.

I'm never lucky enough to find a small pineapple, the ones I see are a big as an ice bucket. Too much for one, even a greedy one like me.

1 cup diced fresh pineapple
1/2 cup diced red bell pepper
1/2 cup diced cucumber
2 teaspoons rice vinegar

Combine all ingredients in a small bowl.

Great over steaks or fish or served with chips.

Liz, thanks for sharing the salsa recipe. My DH just sliced two fresh pineapples (they were given to us) yesterday and now I can use some of it this way. They are so sweet and delicious.
