Jello In a Can
1 20 oz can sliced pineapple
3 ounces Jello gelatin -- your choice
1 cup boiling water
Pour off pineapple juice from can but leave pineapple in the can (Save juice for another use).
Dissolve jello in boiling water. Cool slightly. Pour into can over the pineapple. Chill until set.
To serve, run knife around inside of can and tip out. Slice between the pineapple rings.

One of my favorite things to do with fresh pineapple is to grill it.
Just brush it with a little melted butter and throw it on the grill. When it starts to caramelize on one side, flip it.
Lay it in the center of a plate and top with a scoop of vanilla ice cream. If you really want to gild the lily, add a little warm caramel or dulce de leche over the top.

I love to skewer pineapple chunks with shrimp, onion, and peppers. Season them with salt and pepper, and grill them!
I also had a dish last year that was made with sweet potato, coconut, pineapple, and marshmallows. It was good. I'd love to find a recipe for it.
