- 2 large or 4 small cucumbers
- 2 onions
- 4 tbsp olive oil
- 4 tomatoes
- 2 tsp tomato paste
- 1 clove garlic
- 2 tbsp vinegar
- thyme
- 3/4 pound mushrooms
Peel, seed and cut the cucumbers into 1" lengths. Boil for 5 minutes then remove from pan. Saute 2 sliced onions in 2 tbsp olive oil until tender. Add 4 diced, peeled, and seeded tomatoes, 2 tsp tomato paste, 1 clove garlic, 2 tbsp vinegar, a pinch of thyme, and 3/4 pound of sliced mushrooms that have been sauteed in 2 tbsp olive oil for about 3 minutes. Season, mix and chill.
