I saw that Rice Noodle link too CMan. It was an interesting find and learning the method used.I was looking for more of a rice noodle recipe for the really thin type noodles or even the noodles that you stretch. No luck.
Jakester, the rice noodles in the link above would be a great alternative and the results would be great for a child with allergies to wheat products.

I am just looking for the correct way to charge per plate for a banquet I have been asked to cater. I have search some web sites and cannot come up with an answer. I don't know if anyone can help be out but thanks for any ideas you can send my way.

Hi Sandra- and welcome to Spice Place.
This is a difficult question to answer- cause there are many factors to consider.- more than simply what you are serving.
How large of a group? Will your overhead include hiring kitchen-help to assist you? Servers? Bar-Tenders?
Are you delivering food- or serving away from your kitchen- on location somewhere else?
Are you providing paper-ware? China? Glassware? Flowers? A Dance Floor? Music/band/DJ?
Are you/your staff cleaning-up the mess?
These are just a few of the things to consider- and there are more!

Good morning,
I believe there are approx. 80 people
I have 3 people assisting me in a kitchen at a VFW club
All tableware is available there.
This is a self serve buffet and we will be cleaning up the mess.
I have been trying to put together a menu for them to choose from but so far have not heard exactly what they want.
I usally volunteer for these functions and have never been asked to charge by the plate before. Any help you can give will be appreciated.

First of all - you need a menu - something that you can handle with no problems. As far as coming up with a menu - you'll never get them all to agree on the same things.
So start with some basics - see how they go and then take it from there.
Charging? What's it going to cost you? You can make a profit, break even, or go under.
Start the menu - go shopping - add it up - see what you come up with before you do anything else.
An easy buffet (although you didn't state if it was breakfast/brunch/lunch/dinner) could include a pasta dish of some sort - tomato sauce holds well; meatloaf; sliced ham; sauerkraut with sliced sausage, mashed potatoes with gravies (both light and dark), a couple veggies, definitely salad, jellos salads, etc.
You can try breaded pork chops, various bean or veggie salads, hamburgers with onions in sauce, sliced beef or turkey breast with gravy, roast potatoes, etc.
Rice pilaf, stroganoff, buttered noodles, some cakes or cupcakes - anything goes.
