Apple Cake I Ingredients

• 4 cups diced apples
• 2 cups sugar
• 1 cup canola oil
• 2 tsp cinnamon
• 2 tbsp pure vanilla extract
• 2 eggs
• 3 cups unbleached flour
• 2 tsp baking soda
• 1 cups raisins
• 1 cups walnuts
• 1/4 tsp salt

To make Apple Cake I

1. Combine diced apples, sugar, canola oil, cinnamon, and vanilla. Mix well using a large spoon. Place in refrigerator for 1 hour.
2. Beat the eggs, and add to the apple mixture. Mix by hand.
3. Preheat oven to 350° F.
4. Combine flour, baking soda, and salt. Mix by hand with the apple mixture.
5. Add walnuts and raisens. Mix by hand so as not to break nuts.
6. Pour Apple Cake batter into a lightly greased and floured bundt or tube pan.
7. Bake Apple Cake for about 50 to 55 minutes.
8. Remove Apple Cake from pan, and cool on a wire rack.
