Recipe: Charcoaled Salmon
- 4 lbs salmon, cleaned
- 1 lemon, sliced
- 3 tbsps butter or magarine
- dried parsley flakes
- Wipe the fish well with paper towels and place in a piece of heavy-duty foil.
- Put the butter and several slices of lemon in the fish cavity.
- Wrap the fish in the foil.
- Place fish package on charcoal grill about 3 inches from the coals for 20 mins on each side.
- When you turn the fish, make sure the foil seal is tight so you don't lose any of the juices.
- To speed cooking you may wish to cover the grill.
- When the salmon is done, discard the skin and cooked lemon.
- Serve with fresh lemon slices and garnish with dried parsley flakes.
