Toasting Pine Nuts...Pine Nuts take on greater flavor depth and a crispier, crunchier texture when toasted. Oven toasting: Preheat oven to 325 degrees. Place the nuts in a small pan and bake, shaking once or twice, until just golden, 7 to 10 minutes. Let cool.
About Pine Nuts
There are about a dozen species of American pines with nuts large and flavorful enough to be edible. However, the most common source of pine nuts are the stone pine tree found around the Northern edges of the Mediterranean Sea (including the countries from Portugal east to Lebanon). The nut of the stone pine is soft and is found inside the cone of the tree. It has a torpedo shape and a delicate flavor with a “piney” overtone. Pine nuts cost more than other tree nuts because of the labor intensive method of harvest and preparation.
