Recipe: Ghirardelli Turtles
- 24 caramels, unwrapped
- 1 cup pecan halves
- 8 oz Ghirardelli Candy Making and Dipping Bar (4 sections) Double Chocolate Flavor
- 4oz Ghirardelli Candy Making and Dipping Bar (2 sections) White Chocolate Flavor
- Place caramel squares in microwave-safe bowl
- Microwave at half power or defrost setting for 10-second intervals and stir after each interval until caramel is soft (caramels keep their shape until stirred). DO NOT OVERHEAT.
- Spray cookie sheet with non-stick spray amd drop caramel by tablespoonfuls onto sheet for each turtle. Insert end of pecan halfs in four corners of turtle to form an 'X'.
- Melt Double Chocolate Flavor, using melting instructions below, and spook over tops of turtles to cover caramel.
- Cool at room temperature until hard, about 20-30 minutes.
- Melt White Chocolate Flavor, using melting instructions below.
- Dip a fork into the melted White Chocolate, and drizzle over turtles to form zig-zagged lines of white chocolate over the dar chocolate.
- Cool until hard. Makes 12 servings.
Recipe: Almond Bark
- 3/4 cup plain or roasted almonds (whole or halves)
- 1 lb Ghirardelli Candy Making and Dipping Bar (8 sections) White Chocolate Flavor
- Melt White Chocolate Flavor, using melting instructions below.
- Combine melted bar with almonds.
- Spread to desired thickness on waxed paper.
- Cool until hard (about 25-35 minutes)
- Break into pieces.
Recipe: Molded Chocolates
- Ghirardelli Candy Making and Dipping Bar White Chocolate Flavor
- Melt White Chocolate Flavor, using melting instructions below.
- Pour into dry molds. Tap gently to remove air bubbles.
- Cool in refrigerator for 10-15 minutes or at 60-65° for 20-30 minutes until hard and easily pieces release from molds.
Melting Directions
Melt Girardelli Candy Making and Dipping Bar carefully (product keeps its shape until stirred). Overheating or the addition of moisture can cause thickening. Be sure all containers and utensils are dry.
Microwave Method
Break Ghirardelli Candy Making and Dipping Bar (16oz) into small pieces and place in microwave-safe container. Microwave at half-power or defrost setting for 1 minute. Stir thoroughly. Continue to microwave and stir at 15 second intervals until smooth and completely melted. If melting less than a pound, reduce microwave time accordingly.
Stove Top Method
Break Ghirardelli Candy Making and Dipping Bar (16 oz) into small pieces and place in top pan of a double boiler over low heat (you may also use a glass or metal mixing bowl on to of a saucepan half full with water). Stir constantly until smooth and melted. Do not allow water to boil.
Storage Tips
For best results, store Ghirardelli Candy Making and Dipping Bar in a cool, dry place. Do not freeze or refrigerate. If opened, store in an airtight container.
