Recipe: Sausage Rice Casserole
- 1 1/2 pounds sausage
- 2 envelopes dry chicken noodle soup mix
- 1 small jar pimento, diced
- 1/2 red pepper, chopped
- 1/2 cup grated sharp Cheddar cheese
- 4 cups boiling water
- 1 cup celery, sliced
- 1 medium onion chopped
- 1 cup uncooked rice
- salt and pepper to taste
Preheat oven to 300° F. Brown sausage in a large pan, and drain off fat. Add and bring to a boil, the water and soup mix. Then add the celery, pimento, onion, pepper, and rice. Put in a greased 9x13 pan and bake at 300° F for 20 minutes. Stir a couple of times. After 20 minutes, put 1/2 cup cheese on top and continue to bake for another 25 -30 minutes, or until the rice is tender.
