Dinner for one!

There's not a lot of food in my house that makes a good dinner for one. So tonight, I boiled up some noodles, strained them and melted some butter on them. Of course the pot I used was kind of small so I'm considering making a second batch. I ate a few saltines with the noodles, too. Overall, not too exciting in my house.
 
Sounds a little boring for a dinner. Hope you had a salad to go with it.

Let's see what I'd could do had I had the stuff around ... you could have made a white sauce instead of just adding butter to the noodles. And a little blanched broccoli, carrots, and asparagus. And a little white Cheddar cheese as a topping (and a protein).
 
I'd have seasoned the noodles with the butter and added a little lemon juice, dill weed, and some parsley flakes. I *love* pasta.
 
There's only so much to do while I'm cooking with one hand. I have an 8 month old who is attached to me most of the day. : )

I'm also not a big fan of veggies in general. To be honest, I really really like buttery noodles. I always have. So it's not as though I'm complaining, it's just... boring. Hah hah.
 
I understand what you mean ainjel.

I found this great site and it helps me a lot when I'm in short supply of ingredients and have no idea what to cook.

Just select the stuff you have at hand and it gives you a list of recipes that you can make with those. Hope that helps! :)

on the nights that hubby is gone for dinner and I'm left to fend for myself, I usually end up heating up some leftovers. Although, I have been known to have buttered noodles too, with a little salt...mmmm...

Sometimes I'll fix myself a grilled cheese, but generally it's something fast and easy. I don't like to "cook" for one, especially if that one is me.

Try adding some grilled chicken to the noodles. It is really good. If you don't want to cook chicken then keep on hand the oscar mayor (I think that is who makes it) pieces of grilled chicken. I know it can be found in the lunch meat isle.

No, I have never heard of that before. Do you add other items or do you just eat it plain? I think it would taste good with some herbs and cheese.
 
Dinner for one ideas:

Tuna Salad Sandwich
Rice with Chinese Sausage (simply steam Chinese sausage along with rice)
Steamed Shrimp and most seafood from the fish counter in the grocery store including Catfish, Tuna, Swordfish, they're all easy to get in pint size servings for one.
Steak and Cheese Sandwich
Macaroni and Cheese, homemade preferred
Chicken Hot Dogs
Red Beans and Rice
 
add some spices to the noodles?

throw in sausages, fried eggs and perhaps a hashbrown?

tat works for me, especially if i'm eating alone.
just want it to be quick and easy. :)
 
nope i just cook the macaroni in the broth. my kid likes it to even though we eat to much pasta.
 
I like rice with a chicken boulion cube in the water...add a couple eggs...boil that & add some left over ground beef (if you have any from tacos or spaghetti or whatever). Mmmm! It's really good.
 
Boring you say? At least you have the energy to put some butter on it. When I was in college, I used to always feel lazy to prepare my food so I was used to eating plain rice or noodles as it is--no butter, no anything. Boring, eh? :D
 
I eat dinner alone a lot. Hubby works evenings. I ahve jsut ate cereal. No mess and easy. lol
 
happy new year to all i guess the macaroni could be called soup or whatever. sometimes i put a little bit of chicken in it.
