HEY, "WHAT'S COOKIN IN JULY"

We have been barbequing more in July, We had chicken breast with soul-
seasoning with hickory chips (I didn't do that:rolleyes:) side dish was salad & mashed potatoes, it was tasty. I had Trix bars for desert. Cookie :)

Well I have my 19 year old cousin staying with me for the rest of the summer. She is trying to save some money before she goes back to school in the fall and Columbus is a good place for her to get a job. While she is here my cooking has changed a little. She is generally pretty open to everything I make but she is just not wild about fish. She tries but she's struggling with it. So I have started to replace the fish nights we had 2-3 nights a week with vegetarian meals. The husband wasn't so crazy about this at first. He likes his meat but an appeal to his wallet sealed the deal. :D

I've been making a lot of grilled chicken and vegetables, turkey meatballs, Salads and vegetarian dinners like lentil tacos and BBQ cauliflower. Over the weekend I also did hotdogs on whole wheat buns with caramelized apple-vidallia compote, sharp cheddar and dijon. along side some braised barlotti beans.

I picked-up some halibut Monday...

...and had been hungry for tempura so I had a few friends over and had them all bring items for fish tacos. Fidel grabbed yummy, thick flour tortillas from a panaderia in his town, Minot's pico de gallo was fabulous- and Betsy's guacamole was chunky and delish. The perfect accompaniments for the hali!

I made salisbury steak with garlic mashed taters yesterday.
Today is pizza burgers with parm/garlic steak fries.

I made BLTs for lunch today on kaiser rolls. We just started getting ripe tomatoes from the garden and I had some thick cut applewood smoked bacon.
